On a recent visit to Southern California, I was glad to find these Just Like Mozzarella shreds at a local grocery.

While the package says, “Melts great!” this is not entirely true. It melts okay. As you can see in the photo below, we had quite a few semi-melted shreds on our pizza (and this vegan pizza cooked for far longer than the pizzas with dairy cheeses, which had long since melted).

However, while this vegan cheese didn’t melt quickly, it eventually melted well enough to enjoy. The cheese itself is creamy and great on pizza, and even one of the staunch non-vegans among us enjoyed it. In the end, this one was worth the extra-long cooking time.
