Trader Joe’s Tofu Scramble with Soy Chorizo

I’ve seen this scramble in the freezer at Trader Joe’s for a while but have never tried it (it’s just so easy to make my own scrambles). However, now that I’ve finally tried this lovely meal, I can highly recommend keeping a couple of these in the freezer for a quick, high-protein breakfast or for an easy meal any time of day (it’s also great wrapped in tortillas or served over tortilla chips).

This scramble is flavorful and on the spicy side, which for me is a big plus. One container is plenty for a meal; half makes a good snack, and it heats up again very well on the stove or in the microwave. The scramble itself has a wonderful texture, with lots of tofu egginess, the spice of the chorizo, and lots of veggies like red and green peppers and spinach.

The one recommendation I have with this dish is to use the microwave, which takes about four minutes. On the back of the package are conventional oven instructions, which are hilariously time-consuming: 30 minutes to bring the product to room temperature, then 40-45 minutes in an oven-safe container in the oven, and then 2-5 minutes to cool. (If you have an hour and a half to prepare a frozen scramble, why not just make one yourself?)

But the four-minute microwave option is perfect … not only quick and easy but perfectly tasty as well.
